About Ceres Mushrooms
Alex Villeneuve is an apprentice chef, brewmaster and Ceres founder. During his time in the brewmaster program at Olds College, Alex found that the craft beer brewing process produces a large amount of a byproduct called spent grain. Seeing that the high quality grain was simply being thrown away or composted in many breweries, he thought to try using it as a substrate to grow edible mushrooms. He ordered some starter cultures on the internet and started growing mushrooms in his dorm room closet. He soon discovered that the mushrooms grown from the grain were larger, tastier and fresher than the ones available in stores.
After some nutritional analysis, he also discovered that the protein content of the grain left after the mushroom had been grown on it had increased very significantly, making it a valuable livestock feed. He incorporated Ceres 2 months after starting college and began refining a larger scale growing process. Ceres now grows mushrooms from craft brewer's grain on a larger scale with very low water and power usage, near zero waste and no chemicals.
