Spinach Mushroom Quiche

Spinach Mushroom Quiche
Fresh spinach, mushrooms, and gruyere. This quiche makes a healthy breakfast or lunch.
What You’ll Need:
1 Tablespoon Olive Oil
2 Cups Mushroom (Sliced)
1 Onion (Diced)
4 Cups Spinach (Chopped)
4 Eggs
1/2 Cup Milk
1/2 Cup Heavy Cream
1 Cup Gruyere (Shredded)
1/2 Teaspoon Salt
Pinch Nutmeg
1 Pie Crust (Thawed)
The How To:
- Preheat the oven to 400°F. Transfer your pie shell to the oven and bake for 20 minutes or until partially baked. Once baked remove and set aside and turn the oven temperature to 325°F.
- In a large pan on medium heat, add in your olive oil and onion. Cook until translucent and tender. Add the mushrooms and cook for 5-6 minutes or until golden brown.
- in your pan add in the spinach, cover and cook for a minute, letting the spinach wilt. stir to combine together and set aside.
- In a large bowl add in the eggs, milk, cream, salt, and nutmeg. Whisk together until well combined.
- In your pre baked pie shell, layer the filling and gruyere, pour the egg mix over top fillings.
- Transfer to the oven and bake for 50-55 minutes or until the center is set and the top is golden. Once baked, let cool for 5-10 minutes. Serve and enjoy!
