Spinach Mushroom Quiche


Spinach Mushroom Quiche 

Fresh spinach, mushrooms, and gruyere. This quiche makes a healthy breakfast or lunch.

What You’ll Need:

1 Tablespoon Olive Oil

2 Cups Mushroom (Sliced)

1 Onion (Diced)

4 Cups Spinach (Chopped)

4 Eggs

1/2 Cup Milk 

1/2 Cup Heavy Cream 

1 Cup Gruyere (Shredded)

1/2 Teaspoon Salt 

Pinch Nutmeg 

1 Pie Crust (Thawed)

The How To:

    1. Preheat the oven to 400°F. Transfer your pie shell to the oven and bake for 20 minutes or until partially baked. Once baked remove and set aside and turn the oven temperature to 325°F.                                                                  
    2. In a large pan on medium heat, add in your olive oil and onion. Cook until translucent and tender. Add the mushrooms and cook for 5-6 minutes or until golden brown.                                                                                             
    3. in your pan add in the spinach, cover and cook for a minute, letting the spinach wilt. stir to combine together and set aside.                       
    4. In a large bowl add in the eggs, milk, cream, salt, and nutmeg. Whisk together until well combined.                                                        
    5. In your pre baked pie shell, layer the filling and gruyere, pour the egg mix over top fillings.                                                                        
    6. Transfer to the oven and bake for 50-55 minutes or until the center is set and the top is golden. Once baked, let cool for 5-10 minutes. Serve and enjoy!
