What You’ll Need:
For the Cake:
2 Cups Flour
2 Teaspoons Baking Powder
1/4 Teaspoon Baking Soda
3/4 Teaspoon Salt
1 1/2 Teaspoons Cinnamon
3/4 Teaspoon Nutmeg
1/2 Teaspoon Ginger
Pinch Cloves
1 1/4 Cup Oil
1 Cup Brown sugar
1 Cup Sugar
4 Eggs
1 1/2 Teaspoons Vanilla
3 Cups Carrots (Grated)
For the Cream Cheese Frosting:
1 Cup Cream Cheese
4 Tablespoons Butter
1 1/2 Cups Icing Sugar
1/2 Cup Maple Syrup
The How To:
- Preheat oven to 350°. Grease and prepare your cake pan with parchment.
- In a medium bowl, add your dry ingredients, including: flour, baking powder, baking soda, salt, and spices. Combine and set aside.
- In a separate bowl cream together the sugar, brown sugar, and oil. Add in eggs incorporating one egg at a time, fully incorporating after each addition, add in vanilla. Beat until well combined.
- In 3 separate parts, fold in your flour mix until just combined. Carefully fold in the carrots until just incorporated.
- Evenly spread batter into your greased pan and bake for 55min or until a toothpick comes out clean. Cool and transfer to a wire rack.
- In a medium bowl cream together cream cheese and butter until smooth. Add in icing sugar and maple syrup. Set in fridge to firm up.
- Frost your cooled cake, serve and enjoy!
