Maple Cream Cheese Carrot Cake

What You’ll Need:

 

For the Cake:

2 Cups Flour

2 Teaspoons Baking Powder

1/4 Teaspoon Baking Soda

3/4 Teaspoon Salt

1 1/2 Teaspoons Cinnamon

3/4 Teaspoon Nutmeg

1/2 Teaspoon Ginger

Pinch Cloves

1 1/4 Cup Oil

1 Cup Brown sugar

1 Cup Sugar

4 Eggs

1 1/2 Teaspoons Vanilla

3 Cups Carrots (Grated)

 

For the Cream Cheese Frosting:

1 Cup Cream Cheese

4 Tablespoons Butter

1 1/2 Cups Icing Sugar

1/2 Cup Maple Syrup

 

 

The How To:

 

  1. Preheat oven to 350°. Grease and prepare your cake pan with parchment.

 

  1. In a medium bowl, add your dry ingredients, including: flour, baking powder, baking soda, salt, and spices. Combine and set aside.

 

  1. In a separate bowl cream together the sugar, brown sugar, and oil. Add in eggs incorporating one egg at a time, fully incorporating after each addition, add in vanilla. Beat until well combined.

 

  1. In 3 separate parts, fold in your flour mix until just combined. Carefully fold in the carrots until just incorporated.

 

  1. Evenly spread batter into your greased pan and bake for 55min or until a toothpick comes out clean. Cool and transfer to a wire rack.

 

  1. In a medium bowl cream together cream cheese and butter until smooth. Add in icing sugar and maple syrup. Set in fridge to firm up.

 

  1. Frost your cooled cake, serve and enjoy!
