Lemon Blueberry Loaf

 

Fresh and fruity. Jump into spring with this tasty treat.

 

What You’ll Need:

             1 1/2 Cup Flour

             1 Teaspoon Baking powder

             1 Teaspoon Salt

             1/3 Cup Butter (Melted)

             1 Cup Sugar

             2 Eggs

            1/2 Teaspoon Vanilla extract

             2 Teaspoons Lemon zest

             2 Tablespoons Lemon Juice

             1/2 Cup Milk

             1 Cup Blueberries

 

 

The How To:

 

  1. Measure It- In a medium bowl mix together flour, baking soda, and salt. In another bowl combine melted Butter, sugar. After well blended add in the Eggs, vanilla, lemon juice and zest. Mix until well combined.

 

  1. Mix It- Add dry mix and Milk to your wet mix slowly in batches, making sure not to overmix. In a small bowl toss your blueberries in 1 Tablespoon of flour, add your coated blueberries into your batter. Mix gently.

 

  1. Bake It- Pour your batter into a greased or lined loaf pan. Bake at 350° for 55-65 minutes, or until a toothpick comes out clean.

 

  1. Finish It- Cool loaf in the pan for 30 min and transfer out of the pan onto a rack. Let cool, slice and serve.
