Creamy Tuscan Salmon

Crispy on the outside, tender on the inside, seared salmon in a delicious creamy sauce, sure to be a family favourite.

           

What You’ll Need:

 4 Pieces of Salmon

Salt and Pepper (to taste)

1 Tablespoon Olive Oil

2 Tablespoon Butter

5-6 Cloves of Garlic (minced)

1 Onion (diced)

5 Ounces Sun Dried Tomatoes

1 3/4 Cup of Heavy Cream

1/3 Cup Vegetable Broth or dry White Wine

3 Cups Spinach

Parmesan Cheese (freshly grated)

 

 

The How To: 

 

  1. The Salmon: In a large pan on high heat, add in your Olive Oil. Season your Salmon filets with salt and pepper. Sear filets in the hot pan for 4-5 minutes on each side. Remove from pan and set aside.

 

  1. The Sauce: In the same pan add your Butter, Garlic, Onion, and Sun Dried Tomatoes, cook until fragrant, about 1 minute. Add your white wine or broth to the pan and cook for another minute or until reduced.

 

  1. The Sauce: Turn the heat down the heat to low and add the Heavy Cream to your pan, let gently simmer and stir occasionally. Add salt and pepper to taste. Add your Spinach and Parmesan Cheese into the sauce allowing the cheese to melt and the spinach to wilt.

 

  1. Finish It Up: Add your seared salmon into the pan with your sauce and spoon the sauce over you salmon. Serve with veggies, pasta, or rice.
